Aurum is our top quality extra virgin olive oil. It is an author blend carefully balanced from selected early-harvested varieties from the Barbariga terroir, characterized by strong fruitiness and freshness. Salvela Aurum is, undoubtedly our best of the best. The ratio of included varieties varies from year to year. We always aim at obtaining a harmonious blend based on the characteristics of a particular year, paying attention to achieve all desirable features without over accentuating any of them.
Food pairing: It pairs well with a variety of dishes, from cooked and fried to cold starters. It pairs perfectly with fish dishes, pasta, risottos, mushrooms, cheeses and salads.
