- The grapes for this wine come from the vineyards from the central part of the island around Smokvica, which is also the cradle of this variety. These are older vineyards with traditionally the best positions for the cultivation of Pošip, which are located at an altitude of 40 m to 160 m. Soil types are different: red soil, sandy soils and rocky terrain. All actions during cultivation in the vineyard are done manually. The harvest date is determined by constant monitoring of the condition of the grapes before the harvest, and it must be done manually and selectively in the early morning hours, in order to preserve the freshness and aroma of the grapes.
Hand-picked Pošip grapes were additionally selected in the basement. The grapes are mashed and macerated for a few hours and then pressed with minimal pressure. The must was cooled and precipitated overnight. Fermentation takes place in stainless steel tanks for two to three weeks, with strict temperature control. After the fermentation is completed, the coarse sediment is drained and aged on a fine sediment for an additional two months. After blending, clarification and filtration, the wine is bottled, after which it is aged for another two months in bottles before being placed on the market.
