- Kremenjača is the area where we grow our best grapes, the best cabernet sauvignon for Kremen Kamen wine. Kremenjača belongs to the group of historically important localities for the cultivation of vines in the Negotinska Krajina and beyond. The mechanical composition of the soil is extraordinary, drained, full of remains of marine sediments and stone, flint stone.
Flint The stone is always a dull ruby color, less mobile and viscous in the glass. I am always pleasantly surprised by the luxurious and multi-layered aroma of the wine, which says that it is concentrated and powerful, but at the same time very fresh. The aromatic profile is always rich, and it evolves and changes over time. Currently, aromas of cassis, dried and fresh plums, blackberries, then eucalyptus, cedar and forest floor dominate. What is always important to me in this wine is that, in addition to mature aromas, there is freshness and character on the nose.
For me, as an oenologist, it is extremely important that this wine contains a lot of high-quality tannins, and it is even more important that there is always an acid that gives the wine its backbone and keeps the fullness and sweetness of the tannins in balance, i.e. balance. As the grapes are in ideal phenolic condition, the post-fermentative maceration could have lasted longer in order to strengthen the structure of the wine even more. After 3 weeks of maceration and after malolactic fermentation, the wine is aged in carefully selected new French oak barrels with carefully selected levels of toasting.
Fruitiness, acidity, tannic structure and a very good integrated oak component make this wine long-lasting in the aftertaste.
