- High quality wine obtained from grapes from isolated positions that are characterised by gravelly sparse soil developed on the geological basis of crumbly limestones. It is golden yellow in colour with recognizable varietal aromas of almond flower, maquis and bitter orange, with notes of fig and heather. In the background, the herbal elements of Mediterranean herbs, nectarines and ripe peaches come to the fore. Creamy and nutty. Medium full body and long finish. It is served chilled to a temperature of 12°C with fish, white meat dishes and desserts of the Mediterranean climate.
The grapes are de-stemmed and crushed with the free run juice fermented separately at 13°C in stainless steel tanks for 25 to 30 days. The wine ages in stainless steel tanks for a six months. During this period, it remains on the fine lees for increased richness and complexity. After bottling, it ages slowly in the bottle for a few months before release
