Rosulja or Rošinjola is a local varietal that has been recognized in southern Istria as an excellent oil-producing olive. It has an intense aroma with notes of semi-ripened tomato, artichokes, lettuce, and dried fruit.
This oil has a pronounced yet well-balanced pungency and bitterness. The refined, powerful flavor of Rosulja is also enriched with accented notes of medicinal herbs.
The oil is clear and deeply golden in color with notes of green. It pairs well with meat, game, and oily fish.
